How to Substitute Alternative Sweeteners in Recipes

Replacing sugar in a recipe is rarely a straight swap. Each alternative sweetener has its own sweetness level relative to sugar, and several have physical properties that affect texture, browning, and moisture retention. Getting the ratio right, and understanding what else changes, is the difference between a recipe that works and one that falls flat.
Start With the Sweetness Ratio
The most important number to know for any sweetener substitution is its sweetness relative to sucrose, or table sugar. If a sweetener is less sweet than sugar, you need more of it to match the same perceived sweetness. If it is sweeter, you need less. This ratio is the foundation of any accurate substitution.
Sweetness perception also shifts with temperature, fat content, and acidity, so real-world results can vary from conversion numbers. Start with the ratios below, taste as you go, and adjust in small increments.
Conversion Ratios for Four Common Sweeteners
The figures below express how much of each alternative sweetener to use in place of one cup of sugar. These are practical starting points, not rigid rules.
- Erythritol: Use 1 1/4 to 1 1/3 cups to replace 1 cup of sugar. Erythritol is roughly 60 to 70 percent as sweet as sugar, so you need a larger volume to reach the same sweetness level. It is a sugar alcohol, and any questions about how it fits a particular diet belong with a doctor or registered dietitian.
- Monk fruit sweetener: Pure monk fruit extract is approximately 150 to 200 times sweeter than sugar, which makes it impractical to measure directly for home baking. Most products sold for home use are blended with erythritol or a similar carrier to bring them to a 1:1 ratio with sugar. Check the label. If it says 1:1, use it cup for cup. If you have a concentrated extract, follow the manufacturer's conversion chart, which will call for a very small amount, often less than a teaspoon per cup of sugar.
- Allulose: Use 1 1/3 cups to replace 1 cup of sugar. Allulose is about 70 percent as sweet as sugar. Of the four sweeteners covered here, it most closely mimics sugar's functional behavior under heat, including browning and caramelization, which makes it especially useful for sauces, custards, and baked goods where color and texture matter.
- Xylitol: Use a 1:1 ratio. Xylitol has sweetness nearly identical to sucrose and dissolves similarly in batters and doughs. One critical note: xylitol is highly toxic to dogs. If there are dogs in your household, store it carefully and keep finished baked goods well out of reach.
How Each Sweetener Behaves in Heat and Baking
Sweetness ratio is only part of the picture. Each sweetener interacts differently with heat, moisture, and other ingredients.
Erythritol does not caramelize or brown the way sugar does. As baked goods cool, it can recrystallize, leaving a gritty texture in cookies or fudge. Combining it with a small amount of allulose can reduce this tendency. Erythritol also produces a noticeable cooling sensation on the tongue, which becomes more apparent in high concentrations or cold preparations such as ice cream or chilled mousses.
Monk fruit blends largely take on the properties of their filler ingredient, usually erythritol. The monk fruit extract itself contributes sweetness without adding a cooling sensation, so a blend can produce a cleaner flavor than straight erythritol alone.
Allulose behaves remarkably like sugar under heat. It browns, caramelizes, adds moisture retention, and contributes to a soft crumb in baked goods. Because it browns faster than sugar, reduce oven temperature by about 25 degrees Fahrenheit and watch your bake time closely. It is also hygroscopic, meaning it draws moisture from the surrounding air, so finished goods can become tacky if left uncovered.
Xylitol dissolves and performs similarly to sugar in most baking applications. It retains moisture well, which can help keep baked goods soft for longer, but it does not caramelize to the same degree as sugar or allulose.
Adjusting for Bulk and Structure
Sugar does more than sweeten. It adds volume, tenderizes gluten, encourages browning, and helps retain moisture. When you substitute a sweeter ingredient at a lower volume, you lose that bulk, which can change the final texture of the recipe. A cake that calls for one cup of sugar and receives only a small amount of a concentrated extract will not have the same crumb or rise.
For recipes where sugar contributes significant structure, such as layer cakes, drop cookies, and quick breads, use sweeteners that can be measured at roughly equal volumes: erythritol, allulose, or xylitol. If the texture still seems off, adding a tablespoon or two of a neutral bulking ingredient, such as unsweetened applesauce or an additional egg, can help compensate for the reduced volume.
In recipes where sugar plays a minor structural role, such as salad dressings, marinades, or simple syrups, a concentrated monk fruit extract works well because there is no bulk to replace and only sweetness is needed.
Storage and Handling
All four sweeteners are shelf-stable and can be stored at room temperature in airtight containers. Erythritol and xylitol may clump in humid conditions but break apart easily without degrading. Allulose absorbs ambient moisture more readily, so a tight seal matters more. Monk fruit blends benefit from storage away from direct sunlight and strong odors, both of which can affect flavor over time.
Before starting any recipe, check whether your sweetener contains anti-caking agents or added flavorings. Both can influence the final result in unexpected ways. Plain, unflavored versions give the most predictable and versatile outcome across a range of recipes.
